Based in Celles-sur-Ource in the Côte des Bar, Champagne Roses de Jeanne produces La Bolorée from a single vineyard planted entirely to Pinot Blanc. The vines grow on limestone soils that contribute both freshness and mineral structure. Fermentation takes place with indigenous yeasts followed by ageing on lees before disgorgement with no dosage. The cooler 2021 vintage emphasised purity and precision.
