Based in Polisot in the Côte des Bar, Champagne Piollot farms organically certified vineyards planted mainly to Pinot Noir on limestone soils rich in marine fossils. Mépetit is produced without dosage, allowing the natural character of the grapes and terroir to take centre stage. Fermentation takes place with indigenous yeasts followed by ageing on lees before disgorgement.
