Tsitska is a late-ripening indigenous white grape from Imereti in western Georgia. Naturally high in acidity, it produces light, energetic wines characterised by citrus, green apple, quince, white flowers and subtle mineral notes. Its freshness and restrained aromatic profile make it particularly well suited to dry white and sparkling wine production. Still expressions are typically delicate and precise, with a clean, refreshing finish. In the traditional Imeretian qvevri method, where skin contact is generally shorter than in Kakheti, Tsitska can develop additional texture and savoury complexity while retaining its vibrant, finely structured character.
