Saperavi is Georgia’s most important indigenous red grape and is cultivated principally in Kakheti. Its name means “to dye” or “to give colour,” reflecting its teinturier character, with pigment present in both the skins and flesh of the grape. Saperavi produces deeply coloured wines with naturally high acidity, substantial tannins and excellent ageing potential. Typical flavours include blackberry, black cherry, plum and blackcurrant, often complemented by violet, liquorice, pepper and earthy spice. It can produce everything from vibrant young reds to structured, oak-aged and qvevri-fermented wines of considerable depth. Its concentration, freshness and savoury complexity place Saperavi among the Caucasus region’s most distinguished red varieties.
