From the chalky slopes of Avize, Pascal Agrapart farms organically minded, low-yield Grand and Premier Cru parcels and vinifies with a grower’s precision: native ferments, full malolactic and patient élevage to let terroir speak. Les 7 Crus is his calling-card non-vintage blend, typically ~90% Chardonnay with a touch of Pinot Noir, sourced from seven villages including Avize, Cramant, Oger and Oiry plus sites such as Avenay-Val-d’Or. Base wine is complemented by reserve wines; a portion is raised in neutral large oak, the rest in tank. Bottled and aged around three years on lees, then disgorged shortly before release with low Extra-Brut dosage.
