Based in Avize, Pascal Agrapart farms Grand Cru Chardonnay in the Côte des Blancs, working organically in practice with meticulous vineyard care and low yields. Fermentations are spontaneous with indigenous yeasts, full malolactic is completed, and élevage takes place primarily in neutral oak barrels to enhance texture and depth. Vénus is sourced from a single old-vine parcel in Avize planted in 1959 and cultivated by horse to protect the fragile chalk soils. The 2018 vintage was vinified in barrel, bottled without fining or filtration and aged around four years on lees before disgorgement.
