Based in the village of Polisot in the Côte des Bar, Champagne Piollot is a small grower estate farming vineyards organically on Kimmeridgian limestone soils similar to those found in nearby Chablis. Champs Rayés is produced primarily from Pinot Noir grown on this distinctive terroir, fermented with indigenous yeasts and aged on lees before disgorgement. The non-vintage blend reflects several harvests to maintain balance and house style.
