Located in the Côte des Bar village of Polisot, Champagne Piollot produces Come des Tallants from Pinot Noir grown on Kimmeridgian limestone slopes. This single-vintage Blanc de Noirs reflects the character of the 2019 harvest and is fermented with indigenous yeasts before ageing on lees in bottle. The wine is released with zero dosage, emphasising purity and mineral tension.
