Based in Courgis near Chablis, Domaine Alice et Olivier de Moor produces small-production wines with minimal intervention. Nuova Descriptio is an experimental cuvée made primarily from Chardonnay sourced from vineyards around the Chablis area. Fermented with indigenous yeasts and aged in neutral oak barrels, the wine reflects the domaine’s exploratory approach while maintaining clarity of fruit and mineral character. The balanced 2022 vintage emphasised freshness and texture.
