Schimberg is a distinctive hillside vineyard overlooking Bergholtz, planted with Pinot Gris on sandstone and limestone-rich soils that contribute both texture and freshness. Biodynamic farming, low yields and careful fruit selection allow the character of the site to be fully expressed. Fermentation occurs naturally with indigenous yeasts, followed by extended ageing on fine lees. The 2022 vintage reveals aromas of ripe pear, orchard fruit and subtle spice. The palate is layered and harmonious, combining richness with mineral tension and a long, elegant finish.
