Located north of Chablis, Fyé is characterised by elevated vineyard sites and shallow limestone soils that favour elegance and aromatic precision. Patrick Piuze’s terroir-focused approach highlights the individuality of the village through careful sourcing and minimal intervention throughout élevage. Fermentation takes place with indigenous yeasts, followed by maturation on fine lees to enhance texture and complexity. The 2024 vintage displays aromas of green apple, citrus peel and white flowers. The palate is refined and energetic, combining bright acidity with a clean, chalky finish.
