Based in Courgis near Chablis, Domaine Alice et Olivier de Moor farms organically and works with minimal intervention to highlight site expression. Bourgogne Chitry comes from vineyards planted on limestone and clay soils just south of Chablis, planted primarily to Chardonnay. Fermentation takes place with indigenous yeasts, typically in stainless steel and older oak barrels, followed by ageing on fine lees to build texture while preserving freshness. The balanced 2022 vintage shows clarity and ripe acidity.
