Based in Monein in Jurançon, Domaine Cauhapé farms steep vineyards in the foothills of the Pyrenees, working with Petit Manseng and Gros Manseng to produce structured, expressive wines. La Canopée is a dry Jurançon made primarily from Petit Manseng grown on clay-limestone soils at altitude. Fermentation takes place in French oak barrels, followed by ageing on lees to build texture and complexity. The warm 2016 vintage delivered ripeness balanced by firm acidity.
