Based in Montilla-Moriles in Andalusia, Bodegas Pérez Barquero produces Gran Barquero Amontillado from Pedro Ximénez grapes grown on the region’s chalky albariza soils. The wine begins ageing under flor as a Fino before the flor disappears and oxidative ageing continues in traditional solera casks. This process gives Amontillado its distinctive balance between freshness and complexity.
