Les Bonnets Blancs is crafted entirely from Melon de Bourgogne, sourced from carefully selected parcels planted on schist and gneiss soils, which contribute both precision and mineral complexity to the finished wine. Farmed according to biodynamic principles, the grapes are harvested at optimal ripeness before fermentation with indigenous yeasts. The wine is then aged on fine lees for several months, enhancing texture and depth while preserving freshness and site expression. The 2025 vintage reveals aromas of lemon, green apple and white flowers. The palate is vibrant and focused, combining crisp acidity with a distinctive saline minerality and a long, refreshing finish.
