Based in the Jura in eastern France, Domaine des Ronces farms organically on marl and limestone soils typical of the region. Chalasse is produced from Chardonnay grown on clay-limestone slopes that provide both freshness and structure. Fermentation takes place with indigenous yeasts in traditional oak barrels, followed by ageing under a thin veil of yeast known as flor, a technique associated with the Jura’s oxidative style. The balanced 2016 vintage delivered both freshness and complexity.
