Based in Bierzo, Michelini i Mufatto produces Encinado from selected parcels of old-vine Mencía planted on slate soils. Fermentation takes place with indigenous yeasts followed by ageing in neutral oak vessels. The balanced 2021 vintage delivered both freshness and concentration.
