Located in the Montilla-Moriles region, Bodegas Pérez Barquero produces Oloroso from Pedro Ximénez grapes that age oxidatively without flor. The wine matures slowly in traditional solera casks where exposure to oxygen builds richness and complexity. Over time the wine develops deep colour and layered aromatics.
